Starch is part of the diet of the people of Delta state, Nigeria. It is used to make owho soup and to make starch (a form of swallow). The process of making starch is the same as making garri but requires an additional step to extract the starch. After extracting the starch, the starch is cook to make a beautiful and delightful swallow.
Directions
- Peel and wash the cassava.
- Grate or grind the cassava.
- Add water to the pulp and strain it with a chiffon fabric. Rinse with more water to make sure the starch is extracted. When done, save the fiber to make garri.
- Let the extract sit for a while and the starch would accumulate and solidify at the bottom. Decant the top water.
- To cook the starch (usi), dissolve some starch in water. It should be loose and runny. Pour in a pan and add a little bit of oil. On medium low heat, stir frequently so that the starch won't solidify at the bottom.
- When it starts to come together, stir quickly and constantly until it is done. It would look translucent and very stretchy when done.
