In this video, I will be showing you how to make Nigerian meat pie from scratch.
Directions
- Wash, peel and cut the veggies into small cubes
- Place the ground beef in a hot pan to start the cooking process. Try to break down any large clumps of meat with a spatula
- Once it starts to sweat and the meat is no longer pink, add the spices and herbs ( Salt, curry, thyme and seasoning cube. Continue to cook until the moisture evaporates.
- Add the chopped garlic and onions and continue to saute til translucent. The add some water and the diced veggies (carrot & potato) and cook til done or till water almost dries out. Then mash some of the potatoes with the back of the spatula to create a thick sauce.
- Cook for a minute or two, then remove from heat to cool down. You can chill it overnight in the fridge.
- Cut the butter into cube and refrigerate for about 30 minute to an hour.
- Sift the flour, add the salt and mix to combine. The add the chilled butter and mix in with the aid or a fork, potato masher or the tips of your fingers
- Add in the ice water gradually until the flour is moist enough to hold together. Push the dough together to form a ball. Split dough into 4 parts, wrap them in a plastic wrap and chill in the fridge for 1 hour.
- Make the egg wash. Beat an egg with 1 tbsp milk
- After an hour, sprinkle some four on the board and roll out the dough. Cut dough into discs and fill with the meat filling.
- Seal the pie with a fork and apply the egg wash
- Bake in a preheated oven (350 degrees F/180 degrees C) for 30 minute.

Crust
5 cups flour
1 pound (4 sticks) unsalted butter
2 tsp salt
1/2 cup + 2 tbsp ice water (1/2 - 1 cup)
For Pie Filling:
1 pound ground beef
1 large potato
1 large carrot
1/2 large white onion (or 1 medium onion)
1 tsp thyme
1 tsp curry powder
1 seasoning cube
Salt to taste
