Eba is a staple in Nigeria that is enjoyed by every tribe. It goes very well with any Nigerian soup. It is made with garri (fried cassava flakes or granules) and hot water. Though easy to make, it sometimes require skill and experience to make the perfect eba. This video contains tips on how to make the perfect eba.
Directions
1st method (traditional way)
- Heat up some water and bring it to a boil.
- Once it boils, pour the boiling water into a bowl and quickly sprinkle the garri into the hot water until the is no more water. If you prefer a softer eba, pour more hot water on top. If you dump the garri into the hot water, you will have some dry spots that could be problematic later. Cover for about 5 minutes to allow the hot water do its thing.
- With a spatula, knead the eba against the side of the bowl until it is well mixed together. Eba is ready. Serve with your favorite soup.
2nd method
- Pour some water into the garri the way you soak garri. It will begin to swell as usual but add more water until it doesn't look tight or stiff. 1 cup of garri + 2 cups of water is a good ratio.
- Put in a microwave for 5 minutes. After 5 minutes, knead and yeba is ready. This is the fastest and easiest way to make eba. The texture is even better because it is more bouncy.
