Who knew that papaya could be a good substitute for tomatoes. You could make a delicious pot of Nigerian stew with papaya. Once mashed, the papaya looks a lot like blended tomatoes. Though the papaya, has its own unique taste that could be prominent, adding more aromatics will minimize it and nobody would know that it was used. You can add some fresh tomatoes if you wish and yet again, you could use the papaya to increase the quantity of your tomato stew. The stew is delicious and tastes just like the regular tomato stew. Ingredients
1 medium - large ripe papaya/pawpaw
4 red peppers
2 1/2 large onions
4 habanero peppers
2 cloves garlic
4 bay leaves
2 cups olive oil (feel free to use more)
12 oz tomato paste/tin tomato
2 seasoning cubes
1 tbsp curry powder
1 tbsp ground ginger
1/2 tsp oregano
1 tsp thyme
Salt to taste
3 - 4 cups turkey stock
Fried turkey
